  • 6 chicken thighs (boneless and skinless)

  • ½ cup of olive oil

  • 3 tablespoons of fresh chopped cilantro (extra for garnishing)

  • 1 ½ teaspoon of minced garlic

  • 1 tablespoon of lime juice

  • 1 teaspoon of ground pepper

  • 1 teaspoon of salt


Directions:

  1. Add chicken thighs to a shallow dish or gallon-sized bag.

  2. In a medium-sized bowl, add olive oil, soy sauce, brown sugar, cilantro, lime zest, lime juice, garlic, pepper, and salt. Whisk them together.

  3. Pour the chicken marinade over the chicken. Allow the chicken to marinate for a minimum of 1 hour, but no longer than 24 hours.

  4. Preheat your grill to medium or medium-high heat.

  5. Place chicken on the grill in a single layer and cook 6 to 8 minutes per side.

  6. Once the internal temperature reaches 165º F and you see grill marks, remove the chicken from the grill.

  7. The chicken should rest for about 5 minutes.

  8. Slice the chicken and garnish it with extra cilantro and serve.
